Suzy’s Taqueria
By: Mary Lynn McSorley
On the fourth of September, Suzy’s Taqueria, a taco food truck, came to the parking lot in front of Regis High School and allowed students to purchase hot food during the lunch period. They will continue to come to the school on Thursdays to provide a change to the regular lunch schedule.
Suzy’s Taqueria is a family-owned and operated food truck and a “Very community-oriented business.” Said Louis Juarez, one of three workers on this truck including Zuly and Leslie Juarez. Suzy’s Taqueria is present at many events across Oregon, including Summerfest, Aumsville Corn Fest, Lamb and Wool Fair, the Harvest Festival, and the Fourth of July events in Turner and Stayton. They also do fundraisers and catering for graduations and weddings. They have won Best Food Truck and this year they won Best Tacos. Suzy’s Taqueria is named after a loved pet, a blue chihuahua, named Suzy. Originally the name was going to be Lucy’s Taqueria, after Suzy’s sister but when Suzy passed away during the construction of the taco truck, they knew they had to honor her.
Suzy’s Taqueria came to life in 2020 when COVID hit, their businesses going downhill due to social distancing, and restaurants closing, they decided to start up a food truck. Thanks to the dedication of the Juarez family, Regis students get to enjoy freshly made food every Thursday. Everyone can agree that Suzy’s Taqueria has an exceptional background and even better burritos.
